We now seem to be in the thick of winter, with all the snow on the ground and chilly days, all you want to do is eat comfort food.
As a mum, I know that my children love good, hearty food with lots of flavour and yumminess.
One of their favourite things are my potato wedges made with Mr Hugh’s Gourmet Rapeseed Oil, this is how I make them:
Cut 6 large potatoes into wedges, leave the skin on for extra flavour and nutrition (wash them though, as they do not appreciate the muddy bits!)
Put them in a large roasting tin and pour on plenty of Mr Hugh’s Gourmet Rapeseed Oil.
Then I add some sea salt, ground black pepper and for a bit of a warming kick some chilli flakes.
Mix it all around in the tin to coat all the potatoes in the ingredients then put into a hot oven at about 200 degrees and cook for about an hour, giving them a shake every now and then.
I like to serve them with salsa dip or cooling mayonnaise.
